Baked Salmon

 INGREDIENTS
1 Salmon
1 half of a lemon 

1 Zucchini Squash
1 Bell Pepper
1 Zucchini Squash
1 Cup of White Rice
Salt
Black Pepper 
Extra Virgin Olive Oil 
Ginger Powder

Preparation 
Let's start by boiling the water for the rice. Pre-heat oven to 450 degrees. Start by cutting the vegetables, prepare the salmon adding some spices to it, black pepper, salt, ginger  and once ready add everything together in one casserole and bake for 45 minutes. Once the water is boiling add the cup of rice, with some salt and a teaspoon of EVO and make sure to keep steering it, Once both rice and salmon are ready, get a plate or bowl (your preference) add the rice and                                                                                        a touch of EVO, add the salmon and the vegetables & Voila'                                                                                              enjoy your baked salmon!

Rice bowl

INGREDIENTS;             
Extra Virgin oil olive 2 teaspoon
Rice 1 cup
Salmon/filet (your preferred fish) 
Seaweed 5 pieces
1 Avocado
Salt
Pepper
Spicy Harissa Mayonnaise
Chili Sesame Oil 
















Preparation
​Start by boiling 2 Cups of water
When the water starts to boil, add 1 cup of white rice along with 2 teaspoon of extra virgin oil olive and a pinch of salt. Add your preferred fish in a small casserole with a touch of EVO and salt and pepper bake for 45 minutes at 400 degrees. 

In the meanwhile steer rice, and lower eat after the very first 10 minutes. 
Always try the rice when you think it's ready (Believe in your instinct) 
Start adding your topics and sauces once the fish and rice are done!
I added some avocado, the crunchiness of seaweed, along with some mayonnaise!
& Bon Appetite!

Chick Pea Salad

INGREDIENTS 
1 Chick pea can
1/2 bag of Kale
4 Cherry Tomatoes
2 Sweet potatoes 
Paprika
Salt
Black Pepper
1 teaspoon of Virgin Oil Olive 

PREPARATION
Massage Kale with a pinch of salt
Bake chick peas and sweet potatoes
with all the spices for 35 minutes at 350 degrees.
Add the cherry tomatoes the last 10 minutes. 
Once ready, add it all together with the kale and add lemon to it & Voila' !

Calabrese Tuna Sandwich

INGREDIENTS 
  1. 1 or 2 Tuna cans
  2. Two Sliced Cranberry/Pecans Bread 
  3. Peppers and Potatoes  
  4. Pinch of Salt
  5. Pepper
  6. Oil




Preparation

First and foremost you are going to make Peppers and potatoes! 
You are going to need a deep pan for frying. Cut potatoes in a thin shape, along with the different peppers (I used yellow, red and green ones) the red ones are the spiciest.
Add them to the pan only after adding five spoons of virgin oil olive. (You do not need to wait for the oil to warm up) it will take about 40-45 min to cook, remember to stir them often and to put the flame on the low after the first 20 minutes. 
Once ready, put aside and let them cool off with no cover on it. 
Open your favorite tuna can (I get mine at the Italian deli) eliminate some of the oil coming with the can. 
Toast the two slices of Bread, once down with that add the tuna, the peppers and potatoes altogether.  Bon Appetite' !

Fish Salad

Quick Salad On The Go 

Ingredients;
  1. Five Leaves of Lettuce
  2. 3 Cherry Tomatoes
  3. ​3 Carrots 
  4. 1/2 Fennel
  5. 1/2 Avocado
  6. 1/2 Lemon 
  7. Breaded Fish filet (Frozen is fine too) 
  8. Salt
  9. Black Pepper
  10. Extra Virgin Olive Oil 
  11. Two Piece of Bread (Optional)   ​​  

PREPARATION 
First, wash all veggies separately and let me dry with a paper towel. Cut the carrots slide thin, along with the fennel and cherry tomatoes. Consequently, cut the avocado in half and start adding that into the lettuce bowl; at the same time, add all of your picked veggies (carrots, fennel, tomatoes). Add a cucumber if you have it! 
We are then ready to dress our salad and add some squeezed lemon juice, salt, and pepper. 
Bake your preferred filet in the oven; I baked mine for over 25 minutes at 450 degrees. 
Once the fish is ready, add it to your colorful salad and enjoy a delicious salad!  :)

Fruit oatmeal

The process is very easy. You first take a small deep pan, add the oats along with your favorite milk of choice (or water) you stir the two for a minute. Once you see that the two have absorbed each other you can add all the topics you like. 
I love fruit, so decided to add the blueberries, raspberries to make it more on the healthier side. However, you can add any topics you like. Such as coconut flakes, strawberries, peanut butter, Nutella, walnuts and so on.

 OATMEAL 

This is one of the easiest and energizing breakfast to make!

Ingredients: All you need is 
A pack of Quaker/ or your brand preference of oats 
3 teaspoon of water or Oat milk/ almond milk
1 touch of cinnamon
1 teaspoon of honey

Raspberries
Blueberries

Orecchiette with Broccoli Rabe & Sausage

ORECCHIETTE WITH SAUSAGE & Broccoli Rabe 
This is one of the most simple dish to make, but also a very yummy one too!
 

Ingredients: 
  • 1 large bunch broccoli rabe, washed 
  • 1 lb lean chicken sausage, removed from casing
  • 1 tsp olive oil
  • 5-6 cloves garlic, chopped
  • 10 oz orecchiette pasta, wheat or gluten-free (Use regular for best results) 
  • 1/4 cup grated Parmigiano Reggiano
  • crushed red pepper flakes, optional 
  • INSTRUCTIONS
  • Cut broccoli rabe 
  • Bring a large/medium pot of water to boil. When it comes to a rolling boil, add broccoli rabe.
  • Blanch for about 1 1/2 - 2 minutes, drain and set aside in a colander.
  • Re-fill pot with water and salt for the pasta and bring back to a boil.
  • Add pasta and cook for about 10-12 minutes 
  • In a large deep sauté pan, brown sausage on medium heat, breaking up into small pieces as it cooks, when completely cooked through set aside in a dish or a bowl.
  • Add olive oil to the pan; when hot add garlic and cook until golden (don't burn).
  • Return broccoli rabe to the pan, mix well with the garlic and oil, season with salt and pepper and cook about a minute. Return cooked sausage to the pan and mix well.
  • Drain pasta and add to the broccoli rabe. Reduce heat and stir for about 30 seconds.
  • Adjust salt and pepper to taste and toss another 30 seconds so that everything is mixed well and the pasta is coated with the sauce.
  • Remove from heat and add to a large pasta dish or divide equally between 6 pasta bowls. Serve with additional grated cheese if you desire. ​

Oven Baked Chicken Drumsticks

This is one of the
easiest dishes to make & also a great food prep meal. 










​INGREDIENTS: 
2 potatoes
1 Sliced of a clove of garlic (Or as desired)
4 Sliced cherry tomatoes
5 Chicken drumsticks 
4 Carrots (cut into big pieces) 
1 Celery (cut into big pieces)
3/4 of ground Black Pepper
A pinch of Salt 
3 Teaspoon of Extra Virgin Oil Olive 

INSTRUCTIONS 
  • In a small bowl combine the cherry tomatoes, butter, oil, black pepper and garlic. 
  • Cut the potatoes into even sizes so they cook thoroughly. 
  • Add the chicken, potatoes and carrots, celery to a baking casserole dish. (I usually use a glass one) 
  • Bake in a preheated oven to 400°F, uncovered (50-60 minutes, longer if necessary). If the chicken drumsticks are ready but don’t have a crispy coat, broil for 5 minutes.
  • Take the juices from the bottom of the dish and pour over all of the ingredients. Enjoy!

Split Pea Soup

Split Pea Soup Ingredients:
  • Olive oil – this is used to saute the vegetables, butter can be substituted.
  • Yellow onion/Red Onion Celery, Carrots and Garlic – these vegetables built up the background flavors of the soup. They add some nice color too.
  • Chicken broth and water – I like to use half chicken broth and half water (vs. all broth) so it doesn’t overpower the delicate flavor of the peas.
  • Dried Split Peas – it’s a common misconception to believe split peas need to be soaked before cooking, no soaking is necessary. But you do want to pick over (check for pebbles and debris) and rinse and drain them.
  • Salt and pepper – 
  • Spices-Ground Cumin, Turmeric. these right here are my absolute favorites spices. Turmeric is extremely healthy known to prevent all sorts of cancer and Alzheimer's disease. It is also a potent antioxidant and anti-inflammatory. So does cumin which also helps lower cholesterol and control blood sugar. ​

In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot
This is my favorite soup, which is why I love making a few times per year especially when the weather gets colder.
